I hope you’ve had a very happy summer. It’s flown by here, and I’m not quite sure I’m ready for it to be September! So in the hopes of stretching out those balmy days just a little longer, I thought I’d share this recipe for lavender lemonade. One of my favorite experiences this summer was visiting a local lavender farm and apiary called Kin Loch, very beautiful, just opened this year. This is their recipe, which they were giving out generously, along with the lemonade itself, to everyone who came to harvest some lavender. You can make it with fresh or dried lavender buds. And very delicious it is too.
KIN LOCH LAVENDER LEMONADE
Ingredients
1 cup (8oz) white sugar
1 tbsp lavender buds (fresh or dry)
1½ cups (¾ pint) fresh squeezed lemon juice
2 cups (1 pint) boiling water
Approximately 2 cups (1 pint) cold water and ice, to taste
Recipe
Put the sugar in a bowl
Add the lavender buds
Add the boiling water
Stir and let steep for 15-30 minutes
Strain everything into a large pitcher
Add the lemon juice, and stir
Add cold water and ice until the taste is to your liking
